台式蛋饼 Taiwanese Style Egg Pancakes
Ingredients (4 pancakes)

Pancakes Batter
1. 80g All purpose flour
2. 20g Cornstarch
3. 150ml Water
4. 1 egg (batter) + 4 eggs (1 egg for each pancake)
5. Salt to taste
6. 3 to 4 stalks scallions (chopped)
6. 3 to 4 stalks scallions (chopped)
*If 1 egg is too much for each pancake, use 1/2 an egg instead.
Fillings
1. Cheese
2. Ham
3. Pork Floss
4. Ketchup
5. Sausage etc
Method
1. To prepare batter, mix all the ingredients for batter together.
2. Heat a pan and add some oil. Scoop some batter and cook both sides.
3. Beat an egg and pour over pancake.
4. Add fillings, in this case I added ham and cheese. Roll pancake and cook for 1 to 2 min.
5. Add ketchup if you want. Serve hot.
