Deep fried egg plant with pork floss
Ingredients
1. 1 egg plant (cut into wedges)
2. Pork floss (depend on your preference)
Batter
1 1 tbsp butter
2. 1 cup self-raising flour ( or 1 cup all purpose flour + 1 1/2 tsp baking powder)
3. 1 tsp baking soda
4. 2 tbsp rice flour
5. 250 ml water
6. pepper to taste
7. 1/2 tsp salt
Method
1. Wash egg plant and pat dry. Prepare batter by adding all the ingredient expect water.
3. Slowly add water and stir. Batter should not be too watery or thick. It should leave a trail on the batter when you lift your spoon. Sometimes you don't need to use all 250 ml of water.
4. Keep the batter in the refrigerator for at least 30 min. It will be crispier when deep fried.
5. Dip egg plant into batter and deep fried in hot oil until golden brown.
6. Serve it with pork floss.
