葱油拌面 Spring Onion Oil Noodles




Ingredients (1 bowl)

1)  1 packet of noodles (according to your preference)
2)   About 6 stalks spring onions
3)  1 clove shallot
4)  2 to 3 cloves garlic
5)  3 tbsp. soy sauce
6)  1 tbsp. dark soy sauce
7)  1 tbsp. dried shrimp (optional) (soaked and roughly chopped)
8)  1.5 tbsp. sugar

Method

Making Spring Onion Oil

1)  Wash and cut spring onion into long sections and pat dry.
2)   Slice garlic and shallot
3)   Heat 80 ml of oil using low heat.  Cook garlic, shallot and the end part of spring onion (white or purple parts depending of the type of spring onions).  Cook until garlic, shallot and spring onion start to turn brown.  Remove garlic, shallot and spring onion.
4)  Cook (low heat)  the rest of spring onion (the green part) until starting to turn brown.  Spring onion will taste bitter if over cook.  Remove from oil
5)  Pour light and dark soy sauce, sugar to oil and mix well.
6)  Add fried spring onions and dried shrimps and give it a few stir to let it immerse in oil.


Assemble

1)  Cook noodles.  Once done, drain noodles
2)  Scoop 2 to 3 tablespoon of oil to noodles and mix well.
3)  Serve with some fried spring onions.
