Steam chicken with black fungus and red dates







Method

1.  500g chicken thighs or chicken  (chop into parts)
2.  1 handful of black fungus (soaked and cut to bitesize)
3.  4 dried shitake mushrooms (soaked and slice)
4.  1 thumb size ginge (slice thinly)
5.  4 cloves garlic (minced)
6.  1 tbsp. goji berries (optional)
7.  5 red dates (slice)

Marinade
1.  1 tbsp. oyster sauce
2.  2 tbsp. light soy sauce
3.  2 tbsp. Shaoxing wine
4.  1 tbsp. sesame oil
5.  1/2 tsp corn flour
6.  salt (to taste)
7.  pepper


Methods

1.  Wash chicken.  Pour marinade ingredients over chicken for at least 1 hour.
2.  Transfer chicken to a plate for steaming.  Arrange black fungus, mushrooms, garlic, ginger and goji berries on chicken.
3.  Steam on medium high heat for 20 mins.
