Cream Cheese Muffins








Ingredients for 6 muffins  (adapted from Apron)

Muffins

1.  40g Cream Cheese
2.  60g unsalted butter
3.  80g sugar
4.  2 eggs
5.  100g All purpose flour (can be replaced by cake flour)
6.  1/2 tsp baking powder

Cream Cheese Fillings

1.  100g Cream Cheese
2.  25g icing sugar
3.  1 egg yolk


Method

Muffins

1.  Cream  butter, sugar and cream cheese in a mixer until fluffy and light yellow.
2.  Add egg, one at a time and mix until combine.
3.  Sift in flour and baking powder.
4.  Fold dry ingredients to batter until well combine.
5.  Fill 3/4 of muffin liners with batter. 

Fillings

1.  Add cream cheese, icing sugar and 1 egg yolk to a mixing bowl and mix until combine.
2.  Transfer fillings to a pipping bag.
3.  Pipe fillings to the batter by inserting it to the middle of the batter.  Batter will rise as you pipe.
4.  Bake in a 170 degree oven for 20 to 25 min or until done.
