避风塘虾 Typhoon Shelter Prawn




Ingredients

1.  12 prawns (devine, keep shells)
2.  1/2 cup panko
3.  6 cloves garlic (minced)
4.  1 tsp minced ginger
5.  3 stalks spring onions (cut into sections)
6.  2 to 3 chilies (cut)
7.  2 tbsp cornstarch
8.  1 tbsp Shao Xing wine
9.  1/2 tsp salt


Sauce
1.  1 tsp sesame oil
2.  1 tbsp Shao Xing wine
3.  1 tsp light soy sauce
4.  1 tsp sugar
5.  1/2 tsp salt
6.  1/2 tsp pepper

Method

1.  Fried panko in a heat pan without oil until brown.
2.  Fried 2/3 mince garlic until brown. (Add garlic in unheated oil.  Turn heat to low and fried slowly)
1.  Marinate prawns with Shao Xing wine and salt for 15 min.
2.  Pat the prawns dry with kitchen towel.  Coat with cornstarch and fried prawns.  Set aside.
3.  Heat pan with oil.  Sautee the rest of garlic, garlic, spring onions and chili until fragrant.
4.  Add sauce and mix. 
5.  Add fried garlic and panko to sauce and mix well.
6.  Finally add prawns and mix well.
