Mango Sticky Rice







Ingredients

Sticky rice with coconut syrup

1)  1 cup glutinous rice
2)  2/3 cup coconut milk or coconut cream
3)  1/2 tsp salt
4)  1/2 cup sugar

Salted coconut

1)  1/2 cup coconut milk
2)  1/4 tsp salt
3)  1 tbsp. water
4)  1 tsp cornstarch

if you are using coconut cream  :  1/2 cup coconut cream and 1/4 tsp salt


Method

Sticky rice

1)  Wash glutinous rice and soak for at least 4 hours or overnight.
2)  Wrap rice in damp muslin cloth and steam for about 20 min or until rice is cooked.

Sweet coconut syrup

1)  Heat coconut milk / cream with salt and sugar
2)  Turn off the heat once sugar melts. Keep warm

Rice + Syrup

1)  Fluff rice once cooked.  Pour coconut syrup over rice.  Stir and break up any lumps.  
2)  Cover rice for 20 min.  Stir again to ensure rice is coated with syrup.

Salted coconut 

1)  Heat coconut milk, cornstarch, salt and water.
2)  Allow mixture to come to a gentle boil and thicken.  Let it cool.

Serve
1)  Drizzle salted coconut over rice.  Serve with cut mangoes.  You can also serve with toasted mung beans


*Why use muslin cloth  

Muslin cloth will allow steam to permeate and steam the rice while keeping it moist by trapping the steam and heat for more even cooking.
