Prawns Glass Noodles 冬粉虾
The garlic, ginger and peppery smell fills the air when the lid of prawn glass noodles is opened. This is a great dish to impress your guest.
Ingredients
1. 1 packet glass noodles 150g
2. 10 - 12 prawns
3. 6 gloves garlic
4. 15 slices ginger
5. 6 cliantro stems (smashed)
6. spring onions
7. cliantro
8. 1 tsp. pepper (or more if you like)
Sauce
1. 2 tbsp oyster sauce
2. 2 tbsp light soy sauce
3. 1 tsp dark soy sauce
4. 120 ml chicken stock
5. black and white pepper
Method
1. Soak glass noodles in room temperature water for about 10 to 15 min until soft. Transfer soften glass noodles into a big bowl.
2. Remove veins from prawns. It is best to keep the shells on.
3. Prepare the sauce. Pour the sauce over the noodles and prawns and give it a toss to allow noodles and prawns to absorb the sauce.
4. Cook prawns in a claypot or wok. Remove prawns from heat once they turn orange.
5. Using the same claypot or wok, sautee garlic, ginger, cliantro stems until fragrant. Add pepper
6. Add glass noodles and half the amount of sauce. Give it a little stir and cover wok with a lid for about 1 to 2 min.
7. Add prawns and the rest of the sauce. Top with spring onions and some cliantro. Cover the lid for 1 to 2 mins. Serve hot.
