Yam Cake 芋头糕

 



Ingredients (9 inch baking tray or two 6 inch round baking tray)

1.  About 200g yam (cut to small cubes)

2.  2 tbsp dried shrimps (soaked and diced)

3.  2 garlic (minced)

4.  5 dried shitake mushrooms (soak and diced)

Batter

1.  300g rice flour

2.  20g tapioca flour 

3.  10000 ml water

4.  1 chicken stock cube or 2 tbsp oyster sauce

5.  1 1/2 tsp salt

6.  1/2 tsp pepper


Method

Batter

1.  Mix flour and water in a large bowl.

2.  Add chicken stock cube or oyster sauce, salt and pepper and stir well.  Set aside.


Yam mixture

1.  Heat pan with oil. Fry garlic, mushrooms and dried shrimp until fragrant.

2.  Add yam cubes and cook until yam turn slightly brown.

3.  Pour batter and stir well.

4.  Cook until slightly lumpy yet there is still liquid.



5.  Transfer batter to a oiled baking tray.

6.  Steam for 30 to 40 min or until done.  

7.  Garnish with toasted sesame seeds, chopped spring onions, sliced chili, fried shallots.
