Scallion Ginger Chicken 手撕姜葱鸡



Ingredients 
Chicken
1 . 2 chicken thighs
2.  4 to 5 scallion stems
3.  4 slices ginger
5.  2 tbsp chinese cooking wine

Scallion and Ginger oil
1. 1 thumb sized ginger (grated)
2.  3 to 4 stalks scallions (chopped)
3.  1/4 tsp salt
5.  1/2 cup oil


Method
Chicken

1. Poach chicken thighs in a pot of boiling water. 
2. When water re-boils again, add scallion stems, ginger slices and cooking wine. Turn to low heat and cook for 20 minutes. 
3. Prepare a large bowl of cold water. After 20 min, put chicken thighs cold water and allow chicken thighs to cool down before shredding roughly with hands.

Scallions and Ginger oil

1. Season scallion and ginger with salt.
2. Heat some oil in pan. 
3. Once oil is heated, pour over scallion and ginger.
4. To serve, pour scallion and ginger oil over chicken. 

* Poke chicken with chopsticks to check is chicken is cooked.
