Glutinous Rice with rice cooker 电锅糯米饭






Ingredient

1)  1 cup of glutinous rice (soak overnight or at least an hour)
2)  1 tbsp minced garlic
3)  1/2 cup dried shiitake mushrooms (rehyrated and chopped)
4)  2 tbsp dried shrimps (soaked in water and roughly chopped)
5)  some spring onion (chopped)
6)  1 Chinese sausage (I don't use Chinese sausage as my children dislike the taste)
7)  Some roasted nuts (I usually roast my own nuts with airfryer)

*Do not discard water use to soak shiitake mushroom and dried shrimps.  It will be used to cook rice.
*Total amount of water : 1/3 cup

Sauce
1)  2 tbsp Chinese cooking wine
2)  2 tbsp soy sauce
3)  1/2 tbsp oyster sauce
4)  1/2 tsp salt
5)  some pepper
6)  1 tsp sesame oil

Method

1)  Heat pan with oil and sautee garlic, mushroom and dried shrimps until fragrant.  (If you are using Chinese sausage, sautee with garlic first before adding mushroom and dried shrimps)

2)  Pour in the sauce and cook for a few minutes

3)  Turn off heat and add rice.  Mix them well so that rice will be coated with sauce.

4)  Transfer to rice cooker pot.

5)  Add 3/4 cup of water that is used to soaked mushroom and dried shrimps.

6)  Let the rice cooking does its job.  Once it is cooked, sprinkle some spring onion and throw in some roasted nuts and enjoy the meal.
