Cabbage Pancake (Chinese)




Ingredients
1. Half small cabbage, about 1 large bowl (shred thinly)
2. a small carrot (shred thinly)
3. 3 - 4 slices ham (cut into small sizes)
4. a few stalk spring onions (chopped)
5. sesame seeds (optional)








Batter
1. 2 eggs
2. 5 tbsp flour
3. 8 tbsp water
4. 1/2 tsp pepper
5.  1/3 tsp salt

Method

Vegetables and ham
1.  Fry carrot to soften them and set aside.
2.  Pan fry ham or bacon (if you are using bacon) to crisp.
3.  Put carrot, ham, spring onions, sesame seeds and cabbage in a big mixing bowl

Batter
Batter
1.  Add water to eggs and whisk.
2.  Add flour and mix well.  If batter is too thick, add water (batter must not be too thick)
3.  Add pepper and salt








4.  Pour batter to the vegetables and ham and mix well.  It will look like coleslaw. 





5.  Prepare a frying pan.  Add oil.  Scoop some vegetable and pan fry under the bottom turns golden brown.  Flip pancake and continue to pan fry until golden brown.
