Blueberrry Cheese Tarts


Blueberry cheese tarts are not difficult to bake even though it may sound complicated.  You can prepare the pastry the night before and fill it with cream cheese fillings and blueberry jam the next morning.  You can enjoy the tarts for breakfast or tea break the next day.








Ingredients (Yield 12 tarts)
*All ingredients should be at room temperature

Pastry

1. 100g butter
2. 60g icing sugar
3. 200g plain flour
4. 1/8 tsp. salt
5. 1/2 tsp. vanilla essence
6. 1 egg Cream Cheese Fillings 1.  250g cream cheese 2. 25g butter 3. 45g fine sugar 4. 20g all purpose flour 5. 1 egg 6. about 5 tbsp Blueberry jam (depend on personal preference)



Method

Pastry

1.  Beat butter, sugar and light and fluffy.
2.  Add salt and vanilla essence and continue to beat over medium speed.
3.  Add egg and beat until combined.
4.  Add flour and beat over low speed until crumbly.
     At this juncture, lightly knead with hands.
5.  Form a dough and place it in the refrigerator for 30 mins.
6.  Place a small dough onto a greased tart mould.
     Press dough gently with fingers to cover the tart mould.
     Trim off the access dough. 
7.  Pierce some holes at the bottom of the dough with fork.



8.  Bake pastry in a preheated oven at 160 degree for about 10 mins (depending on your oven).


Cream Cheese Fillings

1.  Beat cream cheese, butter and sugar until smooth.
2.  Add egg and beat until combined.
3.  Add flour and beat with low speed.
*Add 1 tsp of milk if cream is too thick

Assemble

1.  Fill each pastry with about 1 tbsp. of cream cheese.
2.  Add 1/2 tsp of blueberry jam. 
3.  Use a skewer to swirl the jam.
4.  Bake in a 160 degree oven for 8 to 10 mins.
5.  Allow tarts to cool before serving.

Fill pastry with cream cheese and jam.
