Crispy Noodles with Sauce 生面
Ingredients
1. A packet of crispy noodles (I use this brand)
2. Some prawns (de-shelled and de-vein), slices of fish or squids (cut into small pieces)
3. Chicken or Pork (sliced, marinade with light soy sauce and cooking wine)
4. Bok Choy / Cai Xin
5. 2 eggs (beaten)
6. 1 tbsp of minced shallots, garlic and ginger
7. 500ml of chicken stock
Sauce for gravy
1. 1 1/2 tbsp dark soy sauce
2. 2 tbsp oyster sauce
3. 2 tbsp cooking wine
4. 1 tbsp sesame oil
5. dash of pepper
6. Slurry : 2 tbsp cornstarch + 2 tbsp water
Making your own crispy noodles
1. Boil a packet of egg noodles.
2. Strain well.
3. Pan fried both sides until crispy.
Method
1. Sautee minced shallots, garlic and ginger until fragrant.
2. Add meat/seafood. Stir fry until colour change.
3. Add vegetables and chicken stock.
4. Add dark soy sauce, oyster sauce, cooking wine, sesame oil and pepper.
5. Allow sauce to simmer. Pour beaten eggs slowly.
6. Thicken sauce by adding slurry
7. Pour gravy over noodles.
