Pumpkin Bread
Ingredients (2 loaves of braided pumpkin bread)
1. 300g bread flour
2. 30g sugar
3. 1/2 tsp salt
4. 1 tsp yeast
5. 140g pumpkin puree
6. 100ml fresh milk
7. 30g unsalted butter (plus some soften butter)
Method
Pumpkin puree
1. Remove pumpkin skin. Cut pumpkin into small sizes.
2. Steam pumpkin until soft.
3. Mash with a fork. Set aside.
Bread
1. In a large bowl, add flour, sugar, salt, yeast, milk and pumpkin puree.
2. Mix with a mixer if you have. Add 30 butter and continue to mix for 20 mins.
*Knead by hands : Knead flour, sugar, salt, yeast, milk and pumpkin puree until well combined and smooth. Add butter and continue to knead for 15 to 20 min.
3. Round dough and allow it to rise for 1 hour.
4. Degas dough. Divide into 6 equal parts. Round each part. Cover with a cloth or cling it and let it rise for 15 min.
5. Roll each part into a long oval shape. Roll to come a cylinder. Make 3 such cylinder shaped dough.
6. Braid the dough.
7. Coat baking tin with soften butter. Place braided dough into the tin. Cover with a cloth or cling it and let it rise for 1 hour.
8. Brush the surface with milk. Pipe soften butter to the lines of the dough.
9. Bake for 15 to 17 min in a 180 degree oven.
