Matcha Castella Cake
My family and friends like my castella cake. I bought matcha powder recently and decided to bake matcha castella cake.
I was proud of myself after baking it. The texture was soft, moist and spongy.
Ingredients
Part A
1. 5 egg yolks
2. 1 whole egg
3. 50g condensed milk
4. 30 g fresh milk
5. 70g cake flour
6. 10 g matcha powder
7. 75 g oil
Part B
1. 5 egg whites
2. 1 g salt (slightly little than 1/4 tsp)
3. 65 g sugar
Method
Part A
1. Heat oil in microwave for 2 mins.
2. Sift cake flour and matcha powder into oil and mix well.
3. Add milk and egg yolks and stir until batter become smooth
4. Stir in condensed milk until no crumbs and shinny
Part B
1. Add salt to egg white and beat until foamy
2. Add sugar gradually and beat until stiff peak.
Part A + Part B
1. Mix 1/3 of egg white to Part A
2. Mix the rest of Part B to Part A
3. Bake in a pre-heated 150 degree Celsius oven using the waterbath method for 60 mins or until the toothpick comes out clean.
