Apple Cinnamon Muffins

Soft and moist apple cinnamon muffins with delicious streusel. 

Yield 12 muffins (6 muffins)

Ingredients 
1. 250g Flour (125g)
2. 100g brown sugar (50g)
3. 50g caster sugar (25g)
4. 2 tsp baking powder (1 tsp)
5. 1 tsp ground cinnamon powder (1/2 tsp)
6. 1/2 tsp salt (1/4 tsp)
7. 120 ml vegetables oil (60 ml)
8. 120 buttermilk or milk (60 ml)
9. 2 eggs (1 egg)
10. 1.5 tsp vanilla extract (3/4 tsp)
11. 1 cup (about 1 apple) chopped apples (about 1/2 an apple)

Homemade Buttermilk
1/2 cup milk plus 1/2 tbsp vinegar 
1/4 cup milk plus 3/4 tsp vinegar

Streusel 
1. 150g flour (125g)
2. 6 tbsp soften butter (3 tbsp)
3. 100g brown sugar (50g)
4. 66g granulated sugar (33g)
5. 1/2 tsp ground cinnamon powder (1/4)
6. 1/4 tsp salt (1/8 tsp)

Method
Dry ingredients 
1. Combine flour, sugar, salt, ground cinnamon powder, baking powder in a large bowl and mix well.

Wet ingredients 
1. Combine buttermilk,  oil, eggs, vanilla extract in another bowl.
2. Whisk the ingredients.

Combine wet and dry ingredients 
1.Pour wet ingredients into the bowl of dry ingredients. 
2. Mix until about 80% done.
3. Add chopped apples and mix well.
*Do not over mix. Muffin will be dense if over mix
4. Scoop batter equally into muffin liners.

Prepare Streusel 
1. Combine all ingredients in a bowls and mix with a fork until resemble crumbs.
2. Top batter with streusel. 


Bake
1. Bake in a 190 degree celcius oven for about 24 min or until done.
