Miso Ramen

 




Ingredients (2 people)

Broth

1.  2 cloves garlic (minced)

2.  2 small shallots or 1 middle size (chopped)

3.  1/2 tsp minced ginger

4.  1 tbsp toasted white sesame seeds

5.  100g ground pork / chicken (cut to small pieces)

6.  1 tsp dou ban jiang (spicy chili bean paste) / non-spicy dou ban jiang

7.  3 tbsp miso (any type)

8.  1 tbsp sugar

9.  1 tbsp sake 

10.  1/2 tsp salt

11.  4 cups chicken stock

12.  some pepper

13.  1 tbsp sesame oil 


Toppings : 

1. Onsen eggs

2.  corn kernels

3.  spring onions

4.  seaweeds

5.  Japanese cha siu etc.



Method

1.  Heat pan with sesame oil.  Sautee ginger, garlic, shallots until fragrant.

2.  Add pork or chicken and cook until colour turns.

3.  Add doubanjian, miso, sugar and sake.  Mix well.

4.  Pour in white sesame seeds and mix well.  

5.  Add chicken stock.  Stir well and add pepper to broth.

6.  Cook ramen as shown in the instructions on the package.

7.  Serve ramen with broth in a bowl.  Add your preference toppings.
