German Cookies



Love the cute little mouse cookies I baked. It took me quite long to mould the figures but it was worthwhile. The cookies buttery and simply melt into your mouth.

Ingredients
1. 125g potato starch (sift)
2. 15g milk powder (sift)
3. 80g cake flour (sift)
4. 40g icing sugar (sift)
5. 125g unsalted butter
6.  some cocoa powder or 
     1 drop pink food colouring
7. black sesame for eyes

Method
1. Beat butter and icing sugar until fluffy and  pale yellow.
2. Add milk powder, cake flour and potato starch. Mix well to form a dough.
3.  Wrap dough with cling sheet and place it in the fridge for at least 30 mins.
3. Set aside about 2 tbsp of dough. Mix well some cocoa powder. Adjust the amount of cocoa powder to obtain the colour you want.
4. Mold dough into mouse shape.
5. Bake in a 150 degree oven for 15 to 20 min in second lower shelf.

Note
1. You can replace cake flour with plain flour.
     Cake flour will give you a softer texture.

2. To make cake flour at home.
     120g APF - 2 tbsp APF + 2 tbsp cornstarch

3. I personally do not like to use food colouring, I use cocoa powder instead
