Upside Down Apple Cake






Besides using apples to bake apple pies, I also use apples to bake apple cake.  This recipe is so easy to follow and you will be surprised with the cake.   The top is caramelized soft apples and the cake is moist.


Ingredient (Adapted from anitalianinmykitchen)
*8 inch cake pan

Apple Base

1)  65g butter
2)  100g brown sugar
3)  3 apples (peeled, core and slice)
4)  1/2 tsp cinnamon powder

Cake

Dry Ingredient

1)  195g All Purpose Flour
2)  1 1/2 tsp baking powder
3)  a pinch of salt

Wet Ingredient

1)  75g butter (room temp)
2)  1 egg
3)  110g sugar
4)  135g milk
5)  1/2 tsp vanilla essence
6)  1 tsp lemon zest


Method

1)  Pre-heat oven to 180 celsius.  Line an 8 inch (20 cm) cake pan with baking paper.

Apple Base

1.  Melt butter in a pan.  Add brown sugar and cinnamon and combine.
2.  Pour mixture to the cake pan and spread it well.
3.  Place sliced apples neatly on top.

Cake 


1.  Sift flour and add baking powder and salt, set aside.
2.  In a mixing bowl, beat butter and sugar until combine.  
3.  Add vanilla essence and egg.  Beat until light and fluffy.
4.  Gradually add dry ingredient alternately with milk.  Beat until combine.
5.  Gently pour batter over apple base and spread evenly.
6.  Bake for 40 to 45 min or until toothpick come out clean.
7.  Allow it to cool (about 30 min) before turning it over and remove the baking paper.


*Squeeze lemon juice on the apples to prevent it from browning
