Apple Cinnamon Loaf
1. 55g brown sugar
2. 1 tsp ground cinnamon powder
3. 110g white sugar
4. 100g butter softened
5. 2 eggs - at room temp
6. 2 tsp vanilla extract
7. 187g / 1 1/2 cups all-purpose flour
8. 2 tsp baking powder
9. 125g / 1/2 cup warm milk 125g
10. 2 apples, peeled and diced
Optional
You can add some walnuts.
Temperature: 175 degree celcius, 40 min or until done
Method
Apple
1. Peel and dice apples.
2. Coat apple dices with sugar and cinnamon. Set aside
Batter
1. Whisk soften butter and white sugar.
2. Add eggs and vanilla essence. Incorporate into mixture.
3. Sift flour and baking powder into batter. Fold into mixture.
4. Add warm milk. Mix until combined
5. Pour half batter into loaf tin. Add half of the apples.
6. Pour the other half of batter. Top with the rest of apples and walnuts.
7. Baked for 40 min or the toothpick comes out clean.
