Chocolate Fudge Cake
Dry ingredients
1. 220g plain flour
2. 75g unsweetened cocoa powder
3. 300g sugar
4. 2 tsp baking soda
5. 1.5 tsp baking powder
6. 1 tsp salt
Wet ingredients
1. 2 eggs
2. 1 cup (240 ml) buttermilk ( 1 cup milk + 1 tbsp white vinegar)
3. 1/2 cup (120 ml) vegetable oil
4. 1 tsp vanilla extract
5. 1 cup (240 ml) Black coffee
(1 cup hot water + 2 tsp instant coffee)
Chocolate Ganache
1. 225g dark chocolate
2. 1 cup (237 ml) whipping cream
3. 2 tbsp butter (optional)
*adding butter will be ganache shiny and glossy
Method
Dry ingredients
1. Sieve flour, cocoa powder, baking soda and baking powder into a mixing bowl.
2. Add sugar and mix with spatula.
Wet ingredients
1. Combine all wet ingredients in a large bowl and mix well.
Dry + Wet...bake
1. Pour wet ingredients into dry ingredients and mix well
2. Pour batter into a baking tins (21.5 cm by 11 cm)
3. Baked for 35 to 40 min in a 175 degree oven. Allow cake to cool.
This cake is without chocolate ganache.
Chocolate ganache
1. Heat whipping cream till almost boil (bubbles at the side of the pot)
2. Pour cream into a bowl of chocolate. Stir the mixture and let it rest for 30 min or slightly thicken before pouring over cooled cake.
3. After pouring ganache over cake, Place cake in the refrigerator to 2 hour before serving.
