Honey Sponge Cake
I enjoy having honey sponge cake for tea. It has a hint of sweetness and is soft and moist. I love the texture of the cake. I have baked it a few times and sometimes I baked a smaller cake using half of the recipe.
Ingredients (Adapted from Kathrine Kwa)
(8 inch square cake tin)
1. 6 egg white
2. 6 egg yolk
3. 120g sugar
4. 150g plain flour (sift)
5 60g honey
6. 60ml milk
7. 60g melted butter
Method
1. Whisk egg white until foamy.
2. Add sugar in 3 batches. Whisk until stiff peak.
3. Add egg yolk one at a time and whisk each time egg yolk is added.

5. Gently fold flour into batter in 4 batches.

6. Pour in milk and mix well.
7. Add melted butter and mix until combined.

8. Pour batter into lined baking tin.
9. Baked in a pre-heated oven at 160 degree for 50 min (depending on your oven).
*Can use the water bath method too
